Kinds of meat:



 * The meat that a person eats is divided into two types based on the percentage of myoglobin in it, which are white meat, which contains a small percentage of myoglobin, such as chicken and turkey, in addition to red meat that contains a high proportion of this substance, such as: beef and sheep  And beauty, as red meat contains many nutrients important to human health, such as protein, vitamins, and minerals such as phosphorous, iron, potassium and magnesium, and meat is usually bought frozen from shops, and methods of cooking and preparing it vary.



 Preparing the shoulder meat kofta:




 *the ingredients:



 Eight cloves of garlic.  Two tablespoons of ghee.  Pinch of salt.  Pinch of pepper.  Mixed spices.  Meat shoulder.



 *How to prepare :




 Punch the meat with the tip of the knife at separate distances and put a clove of garlic, salt, pepper, and spices in each hole.  Wrap the meat shoulder well with tin foil until the meat is cohesive with the garlic.  Put the margarine on the fire, then the meat in the ghee until browned, then add the water gradually until it is completely cooked.  Remove it from the pot and leave it to cool down, then cut it into thin rings and place it on a serving plate.



 Preparing the eggplant roll with minced meat:




 *the ingredients:


 Two tablespoons of olive oil.  Chopped onion.  One hundred grams of ground meat.  2 pints of garlic.  Half a grain of turkey pepper.  Two tablespoons of tomato gravy.  A pinch of salt and pepper.  A third of a cup of cooking cream.  A cup of yogurt.  A teaspoon of dry mint.  Fried eggplant slices.  Nuts for decoration.



 *How to prepare:



 Put the oil in a frying pan on a low heat, and fry the onions in it until it becomes transparent.  Add the ground meat after thawing and filtering it well and saute it, then add garlic and stir.  Add the bell pepper and two spoons of tomato gravy, and stir for two minutes.  Add the salt, pepper, and cooking cream, then stir all the ingredients well and let them boil for ten minutes.  Bring yogurt and add dry mint, a pinch of salt and set aside.



 * Transfer the eggplant slices after cutting them into medium slices.  Put one tablespoon of the filling in each eggplant slice, then roll it.  Spread the stuffed eggplant slices on a plate, then pour the dry mint and yogurt mixture over them.  Garnish the plate with fried pine nuts or any other nuts available.
